Savory White Cheddar and Chive Cornmeal Waffles

White Cheddar and Chive Cornmeal Waffles is a savory meatless main dish recipe that is good for breakfast, brunch, or dinner. There are so many ways to serve them whether topped with meat and eggs for breakfast or chili for dinner.

I think these jumped my Blackberry Waffles as my new favorite waffles. My son is waffle obsessed and my husband loves cornmeal waffles so I’ve been trying for years to find a good cornmeal waffle recipe. Every recipe I tried ended up with dry, dense waffles which were disappointing.

These waffles have the soft inside of regular waffles with a crisp crunchy outside due to the cornmeal. They were so good I was eating them straight off the waffle iron with just a little bit of butter.

Ingredients and tools you need:

You can substitute dried chives for the fresh chives. If using dried, increase the amount of chives used by 1 Tbsp.

Also, you may use whatever cheddar cheese you like. I used white cheddar since that is our families preference but a regular sharp yellow cheddar works just as well. If you use the yellow cheddar, please note that your waffles might have a slightly different color than mine do.

How To Make White Cheddar and Chive Cornmeal Waffles:

Combine the flour, cornmeal, baking powder, baking soda, sugar, salt, chives and cheese in a large bowl.

In a separate bowl, beat the buttermilk, vegetable oil, and eggs until combined. Add all at once to the dry ingredients and stir until no large chunks of flour remain.

Cook on a hot greased waffle iron for 5 minutes. Keep warm until ready to serve.

I found these cooked perfectly in 5 minutes on my waffle iron when it was set to high. Depending on your waffle iron you may need to adjust the cooking time.

What to serve with cornmeal waffles?

There are so many ways to top these savory waffles. We topped them with polska kielbasa and a fried egg or scrambled eggs. Here are some other ideas:

  • jalapeno honey butter
  • chili
  • sausage gravy
  • sour cream and pico de gallo
  • green onion sour cream
  • use as bread for a sandwich
  • ham and poached eggs
