Slow Cooker Baked Apples with Cinnamon Ice Cream

Slow Cooker Baked Apples are a wonderful treat you can enjoy year round thanks to your slow cooker and delicious when paired with an easy cinnamon ice cream.

I originally saw this recipe many years ago in an All You magazine. I think this combo is great for our rather warm California winter. You get a little bit of warm with something nice and cold. The cinnamon ice cream gives a nice blend with the baked apples. I also like the fact that the baked apples aren’t overly sweet so when paired with the ice cream its just right.

I recently made up a batch and am thinking about using the baked apples and syrup for a really yummy breakfast oatmeal. Baked Apple Oatmeal anyone? Or if you really like to keep a theme going you could make Slow Cooker Cranberry Applesauce over oatmeal for breakfast, Apple Feta Quesadillas for lunch, and Apple Bacon Turkey Burgers for dinner with the Baked Apples with Cinnamon Ice Cream for dessert.

To prep the apples use a vegetable peeler to peel a strip off the top. You don’t want to peel all the way down because otherwise the apples lose their structure, trust me I’ve done that before and it makes it kind of a hot mess, so just peel a bit off the top. Now to core the apples you can do it a couple ways. I did it with a paring knife which works but is a bit rough and you will lose a bit of apple unnecessarily. My preference is to use the small side of a melon baller to get in there and get out the core and seeds. You keep a lot more apple and your far less likely to lose a finger in the process, those fingers have value, ask an actuarian!

You can make your own cinnamon ice cream either from scratch or using a nifty hack that I love. I don’t always have space in my freezer for my ice cream maker and also don’t always have the time. So I like to keep a thing of vanilla ice cream and hack a semi-homemade version. It’s actually kind of similar to how I made the Pumpkin Pie Ice Cream Sundaes where you soften up the ice cream, mix something in, and then get it back in the freezer to harden. It’s a nifty little hack to keep in your back pocket!

Slow Cooker Baked Apples with Cinnamon Ice Cream

The house will smell amazing as these baked apples cook in the slow cooker. Pair them with this semi-homemade cinnamon ice cream for an over the top dessert!

Ingredients

Slow Cooker Baked Apples:

  • 4 medium cooking apples like Granny Smith
  • 3 Tbsp unsalted butter cut into small pieces

Cider Syrup:

  • 1/2 cup brown sugar
  • 1 cup unsweetened apple cider
  • 1/2 tsp cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/4 tsp salt

Cinnamon Ice Cream:

  • 1 Tbsp cinnamon
  • 1 quart vanilla ice cream store bought or homemade

Instructions

Slow Cooker Baked Apples

  • Peel a strip off the top of the apple and core the apples.  To core the apples use a small paring knife or a small melon baller.
  • To make cider syrup, combine brown sugar, apple cider, and spices in a small sauce pan.  Bring to a boil.  Reduce heat to low and allow to simmer for 5 minutes.
  • Place apples in slow cooker, adding a few pieces of butter to each apple cavity.  Pour cider syrup over the apples.
  • Cook the apples in the slow cooker over high heat for about 2-2 1/2 hours. Apples should be tender but still holding their shape.
  • Cool slightly.  Serve with cooking juices spooned over and along side cinnamon ice cream.

Cinnamon Ice Cream

  • If using store bought ice cream, soften the ice cream by leaving at room temperature for 20-30 minutes, until soft enough to mix.  In a large mixing bowl, beat ice cream and cinnamon until thoroughly combined.  Return to freezer until solid, about 30 minutes.
  • For homemade ice cream, use your favorite vanilla ice cream recipe but add the 2 tsp cinnamon into the mix before pouring into your ice cream maker.  Make the ice cream according to the ice cream maker's instructions.
