Pink Dragon Fruit Smoothie

Smoothies are such a great way to sneak in a ton of fruit and sometimes even vegetables, especially for picky eaters. My favorite part is how quick they are to make (thank goodness!) and that they are a popular treat with my kids when it is hot outside.

If you have a suspicious picky eater, make it a fun experience by reading the book Pinkalicious by Victoria and Elizabeth Kann together and then making this pinktastic treat to enjoy together.

Ingredients

  • pink dragon fruit
  • frozen banana
  • frozen tropical fruit
  • vanilla Greek yogurt
  • orange juice
  • chia seeds (optional)

Possible substitutions:

There are two varieties of dragon fruit- pink and white. For this recipe you want the pink because it is what gives that distinctive rich pink color.

The chia seeds are optional but I like to add them for a little nutritional boost plus they can help the smoothie maintain that thicker consistency. Chia seeds absorb water so as the smoothie warms up they soak up the extra liquid!

You could also swap out the yogurt for any flavor you would like. Choose a pink one like raspberry or strawberry for even more fabulous pinkalicious-ness.

How to make this:

Add all ingredients to a blender and blend until smooth.

If needed, stop and use a long spoon to mix while blending if the smoothie is not processing easily.

Top Tips

I used a tropical fruit blend but you are more than welcome to use whatever fruits you want. If you want a darker pink smoothie you can use a berry mix instead.

I am sometimes able to find pre-cut frozen pink dragon fruit in the stores. You can also cut your own dragon fruit and put it in the freezer to use for this if you would like.

Top Tips for cooking with kids

Have your children identify all the different colors of the fruits? What do they think the final color of the smoothie will be?

If you can find both pink and white dragon fruit do a taste test. Talk about if you taste any differences in flavor.

Read the book Pinkalicious and brainstorm foods that are pink and green. Can they think of more pink foods or green foods? What kinds of foods fall into each category (fruit, vegetable, meat, dessert, etc)?

Ingredients

  • 1 1/2 cups dragon fruit
  • 1/2 cup frozen sliced banana about 1/2 a large banana
  • 12 ounces frozen tropical fruit
  • 1 cup vanilla Greek yogurt
  • 3 cups orange juice
  • 2 Tablespoons chia seeds optional

Instructions

  • Add all ingredients to a blender and blend until smooth.
  • If needed, stop the blender and use a long spoon to stir the mixture if the blender is having a hard time blending the mixture.

Notes

You can substitute the tropical fruit for an equal amount of frozen mixed berries for a pinker smoothie. The yogurt can also be substituted for any flavor yogurt you would like.
