Israeli Spice Rub Grilled Chicken Pitas

So versatile, this Israeli Spice Rub Grilled Chicken can be used for pitas, in salads, or simply as grilled chicken with couscous or rice.

In Rachel Ray’s cookbook Thirty Minute Meals 2, I found a recipe for an Israeli Spice Rub. It sounded so good but I didn’t find the way she used it to be particularly appealing.

She did say that the spice rub went on everything she cooked and I can understand why. It’s got a great kick to it and I love the meld of flavors. 

There are so many ways to use this grilled chicken. You can serve it on it’s own with Israeli couscous or Basmati rice and steamed or sauteed veggies. It would also go really well with Greek Quinoa Salad.

It’s also really good on a salad topped with all the things you might find in a gyro or schwarma using some of the additional topping ideas below. This lemon tahini salad dressing would be an amazing addition!

Kids love being able to choose their own toppings which is why I love making pitas. Everyone can mix and match the toppings to create their own dinner and my kids have more control over what they eat which means they are more open to trying new things!

Ingredients you need:

  • sweet paprika
  • ground cumin
  • oregano 
  • coriander
  • crushed red pepper
  • kosher salt
  • chicken breasts

Our favorite way to eat this is in a pita with hummus and lots of veggies. You can go with crunchy fresh veggies like tomatoes and cucumbers or warm grilled veggies like peppers and onions. So many options!

  • cucumber
  • tomatoes
  • olives
  • feta cheese
  • grilled bell peppers
  • grilled onions
  • tahini
  • hummus
  • pita bread
  • tabbouleh

How to make Israeli Spice Rub Grilled Chicken Pitas

  1. Combine spices in bowl. Rub about 2-3 teaspoons of spice rub onto each chicken breast. 
  2. Grill over medium high heat until chicken reaches 165 degrees F internally, about 5-10 minutes per side.
  3. Slice chicken. In a pita, spread hummus, add sliced chicken, and top with desired toppings.

Ingredients

  • 4 pitas
  • 1 lb chicken breasts

Israeli Spice Rub

  • 1 1/2 Tbsp sweet paprika
  • 1 1/2 Tbsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp ground coriander
  • 1/2 to 1 tsp crushed red pepper flakes
  • 1 1/2 tsp coarse Kosher salt

Toppings

  • 1 cucumber chopped
  • 2 tomatoes chopped
  • 1 cup olives chopped
  • 1/2 cup Feta cheese crumbled
  • 3/4 cup hummus

Instructions
