Apple Pumpkin Streusel Bread is a pumpkin bread loaf with chunks of apples all topped with a crunchy streusel topping that make it impossible to resist.
In a small bowl, combine the streusel ingredients. Cut in 2 tsp butter until mixture is crumbly. Set aside.
Preheat oven to 325 degrees F. In large bowl, combine the flour, sugar, pumpkin pie spice, baking soda, and salt. Add chopped apples and toss to coat. Set aside.
In medium bowl, combine eggs, pumpkin, and oil (or applesauce & oil). Add liquid ingredients to dry ingredients and stir just until moistened.
Pour batter into two 9 by 5 greased loaf pan. Sprinkle Streusel Topping over batter.
Bake for 60 to 80 minutes or until a toothpick comes out clean.
Notes
To make muffins, spoon batter into greased or paper lined muffin cups, filling 3/4 full. Sprinkle streusel topping over batter. Bake at 350 for 35 to 40 minutes or until a wooden toothpick comes out clean. Makes 18 muffins.
