Caprese salad is an easy summer salad takes only 10 minutes of prep! Filled with fresh tomatoes, mozzarella, basil and tossed with balsamic vinegar and olive oil, it makes a delicious appetizer as well.
8ouncesmozzarella cheese ball “pearls”also called bocconcini, room temperature
1/4cupfresh basil leaves
1Tablespoongood-quality balsamic vinegar
1Tablespoonextra-virgin olive oil
1teaspoonhoney
1/4teaspooncoarse kosher salt
1/4teaspooncoarsely ground black pepper
Instructions
Rinse the tomatoes and drain the mozzarella balls. Gently dry both with a paper towel.
Cut the tomatoes in half and tear the basil or cut into ribbons.
Whisk together the balsamic vinegar, oil, honey, salt, and black pepper in a medium bowl.
Gently stir in the tomatoes, mozzarella cheese, and torn basil.
Serve immediately.
Notes
Store leftovers in a covered airtight container for no more than 2 days. If you would like, you can serve this in a bed of spring lettuce or spinach for a twist.
